Vegetable pulav

Vegetable pulav is an authentic north Indian dish of vegetables in spicy basmati rice.  It is a complete meal served as lunch or dinner with Raitha, salad, pickle etc. The recipe am gonna share today is prepared N number of times at my home. I simply love this one as its healthy, tasty and very easy. One major advantage of this dish is, even if half of the veggies are not there, the final pulav is gonna taste awesome.

Servings- 4
Ingredients

Basmati rice- 3 cups
Onion- 1 medium
Tomato- 1 medium
Potato*- 1 medium
Green peas*- 1/2 cup
Capsicum- 1/2 medium
Beans- a handful
Cabbage*- a handful
Carrot- 1 small
Coriander leaves- a handful
Green chilly- 1 no
Garam masala powder- 2 tbsp
Water - 5 1/2 cup
Black Pepper- 1 tsp
Cinnamon- 1/2 inch
Cardamom- 4 nos
Lemon*- 1/2 no
Cloves- 6 nos
Anise*- 1 no
Salt to taste
Refined oil- 2 tbsp

Method

These are my ingredients. I chopped them into small cubes. You can chop everything in a blender. I used cooked green peas. No need to cut onion, tomato and chilly any smaller as we have to grind them.

Make a paste with green chilly, tomato and onion without adding too much water. Wash and drain 3 cups of basmati rice.
Heat oil in a pressure cooker and add whole spices. Wait until the raw smell is lost. 
Add onion-tomato paste and saute until the water is dried up.  It will turn darker in color and raw onion smell will be lost. Add garam masala.
Mix for a minute and then add the vegetables. Mix everything and wait for 5 -7 mins until the vegetables are slightly fried.

Add water and salt. When water boils add 3 cups of basmati rice. Once the water starts boiling, squeeze half a lemon.

Pressure cook the pulav. Remove from flame after a whistle and leave it for 20 mins. Once opened use a fork/ chop stick or knife to fluff the rice. Serve hot with Raitha and pickle.

PS:-
  • I used a standard 240 ml measuring cup.
  • You can add or remove any vegetables according to your taste. 
  • Also try adding paneer or cauliflower for a different taste.

  • For making raitha  mix chopped tomato,onion, cucumber* and green chilly in Curd. Add salt to taste.
