Gobi Manchurian/ Cauliflower Manchurian

Gobi Manchurian is an Indian version of Chinese Manchurian with India`s most favorite vegetable- Gobi or Cauliflower. It is a two step process. First, deep fry the cauliflower florets in a thick batter. Make a hot & spicy sauce and add these fried florets. Gobi Manchurian is a favorite restaurant dish for most of the vegetarian Indians. It can be prepared as a dry starter or a gravy. Today I am making a semi gravy Gobi Manchurian.


Preparation time- 30 mins

Ingredients

Cauliflower- 1/2 medium sized cauliflower (30 nos medium sized florets)
Capsicum- 1/2 cup diced
Onion-1/2 cup diced
Garlic- 12 nos finely chopped
Spring onion- 3 nos white portion chopped
Cornflour powder- 1/2 cup+ 1 tbsp
All purpose flour or maida- 1/2 cup
Soya sauce- 2 tbsp
Tomato sauce- 2 tbsp
Red chilly powder-3 tsp
Salt to taste
Water- 2 1/2 cups
Vegetable Oil- 2 tbsp+ oil for frying

Method

These were my ingredients.I believe spring onions, capsicum & garlic are the main taste-makers of this recipe, so don't skip them.
Make a thick batter with maida/ all purpose flour, 1/2 cup cornflour, 1 tbsp soya sauce, 1 tsp red chilly powder(for color), salt and 1/2 cup water. Add the gobi florets and keep aside for 10 mins.
Heat oil in a pan and Deep fry cauliflower.
To make manchurian sauce, Heat 2 tbsp oil in a pan & add garlic. Keep the flame high.
Add spring onion, and saute it for 2 minute.

Add capsicum and onion. Saute it for 5 mins
.
Add red chilly powder. and saute for a minute.
Add soya sauce and tomato sauce. Add 2 cups of water mixed with 1 tbsp cornflour powder and add into the pan. 
Check salt and add if necessary. Once the sauce boils, add cauliflower fries to it and wait for 2-3 mins for everything to mix. Remove from the flame.
Gobi Manchurian is ready. Serve it hot with fried rice, noodles or even with Indian flat breads like Nan, roti, chapati etc.

PS:-
  • If you are using Kashmiri chilly add 3 tsp to the sauce.
  • Any refined oil can be used.
  • I used a standard 240 ml measuring cup.
