Egg fried rice

Fried rice is a Chinese rice item that is popular worldwide. This dish has vegetables, meat and Chinese sauces sauteed in high flame and mixed with boiled long-rice. This is a complete meal. It can be served with other Chinese curry like chilly chicken, Manchurian etc. Among the many varieties of fried rice am gonna try a simple Egg fried rice.


Preparation time- 45 mins
No of servings- 4 nos

Ingredients

Basmati rice- 2 cups
Egg- 2 nos
Green peas- 1/2 cup
Carrot- 2 nos
Spring onion- 3 nos white portion
Beans- 3 nos
Cabbage*- 1/8 of medium sized
Pepper powder- 3/4 tsp
Green chilly- 1 no
Soya sauce- 1 tbsp
Garlic- 10 nos
Water- as required for cooking rice
Capsicum- 1/4 medium sized
Oil- 4 tbsp
Lemon*- 1/2 no

Method

Chop all the vegetables and garlic. You can choose veggies according to your taste, but never omit capsicum and spring onion. For 2 cups of basmati rice I took 3 cups of chopped vegetables.


Boil approximately 6-8 cups of water in a thick bottom vessel. Squeeze half a lemon,1 tbsp oil and  washed rice to the boiling water . When rice is 3/4th cooked, drain the excess water and keep aside.


Heat 2 tbsp of oil in a pan, add garlic and spring onion. Keep the flame high. Saute for 1-2 mins.

Once the raw smell is lost, add all the vegetables and saute for 5-7 mins. We don't want to lose the crunchiness of vegetables. We just need them to be half cooked. Add 1 tbsp of soya sauce and saute for a min. 


Push the vegetables to a side and add 1 tbsp of oil. Crack two eggs & scramble them.

Once the eggs are done, mix it with vegetables and add pepper powder. Check salt and add if necessary.

Add cooked rice and mix it with the veggies carefully. Keep the flame low or if pan is too hot, remove from flame.

Our egg fried rice is ready and can be served with tomato ketchup.
