Cabbage Thoran in Microwave

Cabbage Thoran is a simple side dish served with boiled rice in Kerala. Thoran is an important dry dish in Kerala Sadhya (A grand Kerala banquet served on Banana Leaves). Almost any vegetables can be used to make thoran. Basically a dry dish with grated coconut is a thoran in Kerala. Even fish & meat are used for making thoran. See my Chicken Thoran for more details. Today I am preparing a Cabbage Thoran in Microwave. I am using burner for only tempering.


Preparation time- 20 mins

Ingredients

Cabbage- 1 small or half a medium size
Onion- 1 small
Coconut- 1 cup grated
Coconut Oil- 1 1/2 tbsp
Turmeric powder- 1/2 tsp
Cumin seeds- 1 tsp
Mustard seeds- 1 tsp
Red chilly- 1 no
Green Chilly- 1 medium or 2 small
Curry leaves- 1 Strand
Salt to taste

Method

Finely chop Cabbage , Onion and green chilly. You can use a chopper for this. Do not chop cabbage long before your cooking as it may turn sour.



Put grated coconut, chopped veggies, 2 or 3 curry leaves, turmeric powder and salt in a mixing bowl. Mix it thoroughly for at least a minute. If you like your thoran in white colour omit turmeric powder. Put the mixture in microwave for cooking. Mine took 15 mins to cook. 


Check your mixture occasionally and stir, if you are not sure how much cooking time is required in your microwave.  If you are not interested in micro cooking directly go to next step.Once the cabbage & onion changes colour and loses some of its crunchiness your microwave cooking part is over.



Now heat some oil in a pan. Pop cumin seeds& mustard seeds. Add red chilly & curry leaves.



Add cooked cabbage mixture into this. Reduce the flame to medium.  Keep it for at least 2 mins. If you have not cooked in microwave you kneed to sprinkle some water into the mixture and cover the pan until the cabbage cooks & then keep it open  to make more dry. Check salt. I like my Thoran to be super dry, as that makes onions very yummy,so I kept a little longer.



Your very own Kerala Style Cabbage thoran is ready. Serve it Hot with Steamed rice :)
