Baigan Bhaji

Baigan or Brinjal is a popular vegetable in North India. Bhaji is a batter fried snack item. Brinjal or Aubergine or egg plant.. whatever it is, this purple beauty is not my fav except for this snack. So I can tell, you wont be able to find the great Indian "Baigan Bartha" recipe here. This vegetable if added to a dish make the gravy more thick. It is a very healthy veggie. So here goes Brinjal bhaji.
Preparation time- 15 mins

Ingredients

Egg plant- 2 small size
Gram flour- 1 cup
Water- 1/4 cup or as required
Red chilly powder- 2 tsp
Chat masala*- a pinch
Asafoetida powder- 1 tsp
Salt to taste
Refined Oil as required for frying

Method
Mix all the powder ingredients with water in a mixing bowl. ("thicker batter - better batter")
Cut brinjal into thin round slices. Add some salt. Mix it well and microwave it for 5 mins to remove moisture. If not using a microwave keep aside for 5 mins and gently squeeze out any excess water.
Heat oil. Take each brinjal slices, dip in the batter and gently put in oil. Do not keep brinjal slices in batter for a long time, as it makes our bhaji soggy.
Once the outer coating turns golden brown in color remove from oil and sprinkle chat masala on top of it. Serve it hot with tomato ketchup.
