Vendakka mizhukkupuratti/ Lady`s finger fry

Vendakka mizhukkupuratti is a dry side dish served with boiled rice. It is a Kerala style preparation.  It is spicy and crispy. I am preparing it in microwave initially and for the final frying moving it to a frying pan.
Preparation time- 15 mins

Ingredients

Lady`s finger- 500 gms sliced
Curry leaves- 1 strand
Coconut oil- 1 tbsp
Salt to taste
Turmeric powder- 1/4 tsp
Red chilly powder- 1/2 tbsp heaped
Coriander powder-1 tbsp heaped
Pepper powder-1/2 tsp

Method
Mix all the ingredients except for coconut oil in a micro safe bowl.
Cook in microwave(high power) until its water content is lost and the entire quantity of lady`sfinger reduces to half. I took about 8-10 mins of micro cooking.
Heat oil in a pan and add the mix into it for little more frying.
I cooked for another 5 mins to get a crispy mizhukkupuratti.

PS:-

  • If you are not using microwave, cook the above mixture in a closed container in medium flame till its one and follow the rest of the steps.
