Gajar ka halwa or Carrot Halwa

Gajar (Carrot) Ka Halwa is a north Indian Sweet served along a traditional meal. It is basically from Punjab, though many variants are there in other regions. The process involves slowly cooking of grated carrots in milk, sugar and ghee until it becomes thick. Sweet, Juicy and tender carrots are excellent for halwa. The famous red carrots that you get in north or the small Ooty carrots are good choices.The traditional way of cooking takes more time so today I am gonna try cooking it in Pressure cooker. 


Preparation time: 30 mins
Servings- 2

Ingredients

Carrot- 2 cups (chopped or grated)
Milk- 2 cups
Sugar- 4 tbsp or as required
Cardamom- 3 nos powdered
Ghee- 2 tbsp
Raisins & cashew- 5-6 nos each

Method
Heat 1 tbsp of ghee in Pressure cooker and add carrots. Saute till the moisture is lost.
Add 11/2 cup of milk to this and cook in high flame. Wait for a whistle. Let it cool.
Move the mix to a non- stick pan and add rest of the ingredients. Keep the flame low- medium.
Keep stirring until the halwa becomes thick. Some like to retain little moisture in their halwa, But I like to make it more dry & sticky. Once the ghee starts appearing you are done.
Let it cool and serve it.

PS:-
  • I used a standard 250 ml measuring cup.
  • I haven't used raisins and cashew. ( I don't like them much)
  • For more taste you can add condensed milk at the end.
