Ghee Rice

Ghee rice is, rice cooked along with ghee and whole spices. Many variants are seen in India. The one I am trying today is a Kerala style Ghee rice with minimum Ghee as possible.
Preparation time- 20 mins

Ingredients

Basmati Rice- 2 cup
Ghee- 4 tbsp
Onion- 2 large
Curry leaves- 1 Strand
Cardamom- 6 nos
Cloves- 6 nos
Bay leaves- 1 no
Black Pepper- 1 tsp
Anise- 1 no
Cinnamon- 1/2 inch
Water- 5 3/4 cup
Salt to taste
Raisin & Cashew nuts- as you like

Method
Wash and drain 2 cups of basmati rice. Slice onions for frying.
Heat ghee in a thick bottom vessel. Add all the spices into it & saute for a minute or two.
Add sliced onion and curry leaves. Saute till the onions become golden brown in color.
You can add salt to onions initially to get them sauteed faster. Add Bay leaves.
Add basmati rice into this & roast until ghee is properly mixed.
You can see color of the rice changes. Add 5 3/4 cup of water. Close the lid and cook in medium flame.
When the rice is cooked, fluff it lightly with a fork or chopstick and serve it hot with a spicy curry.

PS:-
  • I used a standard 240 ml measuring cup.
  • I have not  used Raisin & Cashew nuts in my recipe.
