Kozhikotta or Sweet Rice dumplings

Kozhikotta or sweet Rice dumplings is a popular snack in Kerala. Similar dishes are there in other parts of India namely modak, mandai, kozhikottai etc. It has zero oil content and it is steam cooked. It has a sweet coconut filling made with either jaggery or sugar. Today I made ones with sugar filling.

Preparation time- 20 mins

Ingredients

Rice flour- 1 cup
Coconut- 3/4 cup grated
Powdered Sugar- 3 tbsp
Cardamom- 2 nos crushed
Cumin Seeds- 1/2 tsp
Salt- a Pinch
Water- 1/2 cup or as required

Method

Take Rice flour, salt and cumin seeds in a mixing bowl. Add boiling water to this occasionally and mix it.
Be careful when you add water. Once your dough starts resembling something like the above picture, stop adding water.
Now use your hands to mix the dough to get a smooth & firm texture. You can wet your hands if required. Now mix coconut, cardamom & sugar powder in a mixing bowl.You can Keep the mixture in microwave for 2 mins or use it directly.  If you are using sugar crystals(jaggery) then heat sugar in a pan, add coconut and cardamom once sugar is melted. Stir well until coconut is entirely coated in sugar syrup. Remove from flame and let it cool.


Divide the dough into 4 equal lemon sized balls. Flat it using your palm. Wet your palm if required. Keep approximately 1 heaped tbsp of coconut filling in the center. Close it and roll it in your palms to get a smooth dumpling.


Place kozhikattas in a steamer. Your Kerala snack is ready, when an fork inserted in your dumplings comes out clean.
